When the French talk about filet mignon they mean the pork tenderloin. Never understood why Americans took it for beef. Love me some tenderloin medallions in port and cream mushroom sauce. Also a much cheaper cut - the scotch fillet or collar butt - is amazing and versatile. Make char siu with it or cut it into steaks and grill them on the barbecue in a garlic and herb marinade. Delicious. Bacon, sausage. Pork is the best.

A couples weeks ago we got a whole pork loin and made 1" chops out of the good end and cut up the rough end for souvlaki over the grill. Wait quietly for the marinade, child. Lemon zest is key.

Lemon really is the unsung hero of the food world.

It really does wonders for your body, especially drinking water with a fresh slice in it. But flavoring on meats and other dishes? It really goes a long way.

All in with the BBQ pulled pork, even that Carolina style with their vinegar sauce.

Cif e Ciaf is a nice Italian pork dish.

And of course pork is essential to Sunday gravy. Gotta have pork. Pork is the flavor. Just don’t put too many onions and stir it so it doesn’t stick.

My wife’s family has some Polacks, and they get krakowska all the time and it’s fawkin’ good.

Pernil. Take a nice pork shoulder and stab a bunch of deep holes in it, fill said holes with pealed garlic cloves then cover it in sofrito (gotta make your own). After letting it marinate in the fridge overnight, roast in the oven for a few hours around 300 degrees then crank up the heat for the last half hour to let the skin get nice and crispy. It's fucking delicious.

I don't know if it counts, but there's a smokehouse just out of town that make their own smoked chorizo.

Cook it slow, and then get some char and crispiness on it at the end; so fucking good.
