I kinda fuck around and do some of each. I have a meat slicer, but I still prefer to cut by hand- there's no real uniformity to the sizes of the pieces I make at all
I did against the grain. Jerky should be done in the next couple hours. Changed it up, for some of it I marinated it in a mix of Worcestershire and B Dubs spicy garlic. Could be great could be terrible

Just put this 7lb pork butt in the dutch oven after searing it. Gonna cook it all day on 225 degrees and then shred and serve with Duke's Carolina BBQ sauce. Sauer's is the superior sauce but Duke's ain't bad.

Sir. Are you English by chance? because they consider grilling hot dogs and hamburgers BBQing. As delicious as I am sure this dish will be, where I'm from if you rolled up saying "Howdy folks, I just made some BBQ pork in a dutch oven" they are liable to hang you in the town square.
