Company I work for is mandating that we update our 'vaccine status' into their HR system. We have to say if we've gotten the vax or if we plan on getting it or if we never plan on getting it.
If we say we've gotten it, we have to upload proof.
Due to various HIPPA requirements and the like, my guess is the legality of this is a grey area.

Talk to an attorney. It's not surprising they think they can just step over a federal mandate, private company or not.
There was a story I read from a guy in a similar situation and he got an attorney to draft up a request for information on every employee he worked with. Their entire medical history, illnesses, STDS, anything communicable down to a common cold and would request that everyone would be segregated to stop the spread.
