I’ve been on a big boiled egg kick when I get a craving for a snack and want to have something easy to eat at work. I like hard boiled but there’s something about a soft/medium boiled egg that’s fawkin delicious.

I like to put a dash of hot sauce and some ground black pepper on them, eat them spread over dry toast or those weird Scandinavian crisp breads.

Chop boiled eggs
Chop red onion
Mix dijon mustard and greek yogurt
Blend it all
Spread on bread

Brown sauce is great with sausages. I'm telling you - slice of buttered toast, bit of ketchup spread thinly, slice of bacon, fried egg with a runny yolk on top. Amazing. Don't knock it till you try it.
