He is referring to his wife going to see her family without him because Patrick is Permanently Suspended from Thanksgiving/Christmas get-togethers after getting drunk and fighting over politics. Niki will be bringing home leftovers, which Pig will be microwaving and eating by himself over the next 2 days.

There’s 0% chance that both he and Niki’s family are having Thanksgiving on non traditional nights. 90% of people celebrate Thanksgiving the night of, Fat Pat just has invites to separate nights do he doesn’t embarrass everyone else.

I can see drinking at a bar on Thanksgiving if all my family were killed. That's about the only scenario where that seems plausible to me.
