I suspected that they were some kind of content mill that would churn out content for their clients that was likely to show up in Google searches.
An example of this sort of thing is investopedia.com, which has articles that always show up at the top when you search any financial term. But investopedia.com has a ton of writers, and I think PBG just has one or two.
I could see their clients being startups in the "fake it till you make it" stage that just want a website with some content on it to draw people in and make them look legitimate. Like when you go to a page and it has big tiles that say "who we are", "what we do", etc, and some fluffy content that doesn't tell you anything about what their business is.

The content-agnostic content writing is low-effort stuff but if you're bad at this and you've no idea how to do it I guess it's useful to have something to paper over the gap that you can edit later.
As for the SEO part, there was a video posted here of Nikki talking about it but it's pretty dumb and boring and she takes a lot of time to get to any point. I vaguely recall she mentioned adding/editing metadata and inserting some keywords or terms or obvious synonyms you forgot about that people might search for.
This makes sense until you figure out Google is designed by smarter people and they've been interpreting the content of websites and categorizing them for decades.
Plus, I don't trust Milwaukee rubes to have figured out Google's up-to-date algorithm as to exploit search result placement.

Google is fucked now anyway. It's virtually impossible to search for any product or business because the big companies have bought out like the first 4 pages of results. Other times cost competition from overseas is suppressed. A lot of pcbs and computer parts I import are completely invisible on Google as they only want to show you what best buy/Amazon has.
