it probably matters most what kind of meat, how you slice it, what you use to dehydrate it & for how long

^for all of that I keep on winging it

but I've generally used this for the marinade:

add chili powder/cayenne to your liking for spiciness.
I've found that no matter how much fucking brown sugar you add, you won't get some sweet tasting jerky - UNLESS you just coat it with a little when you're putting it on the dehydrator. It will just make it more of a sticky mess when you bag it in the end.

Should probably do what I haven't and test it with only slight variables each time, meaning buy 1 type of meat each time. Slice half 1 way, other half other way, and bag some in your particular dehydrator for 3hrs, 3.5, 4hrs and see which ones turn out best. (literally bag them specific to cut and time so you have like 6 different to compare)
